Where nature, tradition and a thoughtful way of farming come together.

Nestled in the rural landscape of Cogula, near Trancoso in central Portugal, Quinta Estrela do Sul is an eight-hectare organic farm associated with the work of Laetitia Luzi, a French-born producer whose project brings together a respect for nature, biodiversity and traditional knowledge.

The farm’s organic extra virgin olive oil is made from carefully selected olives of several varieties, harvested just before full ripeness and cold-extracted. The result is an olive oil described as fine and balanced, with delicate, fruity notes.

At Quinta Estrela do Sul, the principles of permaculture are combined with traditional local techniques. The harvest and extraction are carried out with respect for the olive trees, their fruit and the biodiversity that surrounds them. The farm is also connected to Hortus Vitae, a wider project dedicated to natural well-being, learning and a closer relationship with the natural world. This reflects a philosophy that values thoughtful cultivation, environmental awareness and the importance of living in harmony with the land.
